Purple Cabbage Salad With Miso Sesame Dressing

Salads have always been one of my favorite side dishes because they are easy to make, colorful and full of flavor. I made this purple cabbage salad with miso sesame dressing for our Saturday night diner date and paired it with soy-butter pan fried tuna and miso maple roasted squash. This purple cabbage salad is the perfect crunchy dish to balance out the soft qualities of the roasted squash and fish.

Purple cabbage is royally pretty right?

One of the things that I love about veggies is that they are a rainbow of color. There are not that many veggies on the purple spectrum, so any chance I have to eat purple cabbage I go for it. I love pairing purple cabbage salad with tangerines, as I’ve done here. The orange color contrasts beautifully with purple and the sweetness of the tangerines balances the bitterness of the cabbage. I also love adding very thinly sliced yellow onions to cabbage salad, it adds a bit of tang.

Miso-sesame dressing is perfectly sweet and salty

Cabbage is one of those veggies that can stand up to a pretty strong dressing (coleslaw comes to mind). This miso-sesame dressing is flavorful and pairs with purple cabbage nicely, but is not too sweet or cloying like a coleslaw can be. I really love using sesame oil for its complex sweet and nutty flavor and it does magical things to cabbage. This miso sesame dressing is easy to make and can be stored in the fridge for a quick dressing for your next salad creation.

This salad is inspired by the many asian slaw recipes I’ve made over the years. However, its different from typical asian coleslaw recipes because I don’t use any soy sauce. Instead I’ve really just focused on the miso for the salty-savory flavor. This dressing is creamier than a typical asian slaw dressing, but not at all like an American slaw covered with mayo.

Purple Cabbage Salad With Miso Sesame Dressing

Ingredients

  • 2 Cups fine-chopped purple cabbage

  • 2 tangerines, peeled and separated

  • 1/4 cup fine-sliced yellow onion

  • 2 tbsp rice wine vinegar

  • 1 tsp grated fresh ginger

  • 1/2 tbsp maple syrup

  • 1 tsp miso paste

  • 1 tbsp sesame oil

  • salt to taste

  • 2 tbsp sesame seeds

Directions

  • Fine chop and wash purple cabbage, pat dry and add to serving bowl. Add sliced onion and tangerines.
  • To make the miso sesame dressing, muddle rice wine vinegar with miso paste until all miso is dissolved and dressing is creamy. Add ginger and maple syrup and stir. Add sesame oil to dressing right before tossing with the salad.
  • Toss purple cabbage salad with miso sesame dressing, add salt to taste. Sprinkle with sesame seeds and serve.
